Spider Web Surprise Brownie Bites

Ingredients
  • 1 box brownie mix
  • 2 eggs
  • 2 tablespoons water
  • 1/3 cup Veg. Oil (Ingredients will vary depending on brand of brownie mix)
  • 3 Tootsie Roll (long, not mini)
Spider Web
  • 1/2 pkg Cream Cheese, softened
  • 2 tablespoons sugar
1. Mix spider web ingredients together, and set aside.
2. Mix brownies according to package.

3. Line a 12 muffin pan with liners or spray with nonstick spray.

4. Quarter Tootsie Rolls.

5. Pour about 1/3 cup of brownie mix into each cup, then place one piece of Tootsie Roll into the center of each brownie.
6. Place your cream cheese mixture into a Ziploc bag, cut a small hole in the corner and draw circles on each of your brownies.

7. With a clean toothpick, pull from the inside circle to the outside edge, making neat little spider webs!

8. Bake brownies at 350 degrees for 34-37 minutes. Allow them to cool in the pan for 10 minutes, then move to a cooling rack.
You can also use 2 mini-muffin pans for actual "bites", it is just harder to make the spider webs, they just blend together.

These are great for Halloween treats & your entire family is sure to love them!

Roasted Garlic, Tomato, & Spinach, Stuffed Crust Pizza Pie

Ingredients
  • 1 can PILLSBURY Pizza Crust Dough
  • 1 tablespoon Olive Oil
  • 1/2 tablespoon minced garlic
  • 1 teaspoon Italian Seasonings
  • 2 plum tomatoes, rinsed and thinly sliced
  • 1 cup fresh spinach leaves
  • 1/2 lb fresh Mozzarella block
  • 2 tablespoons grated Parmesan cheese
1. Preheat oven to 425 degrees.
2. Roll out dough to desired thickness and place on baking stone, allowing edges to stretch outside the stone.
3. Brush dough with olive oil and garlic, then sprinkle Italian seasonings.
4. Cut 1/2 of mozzarella into long strips, like thin string cheese, chop the remaining half into 1/2 inch blocks
5. Place STRIPS (ONLY) on the outside edges of pizza, rough crust inward and pinch closed.
6. Place tomatoes, spinach, and remaining mozzarella evenly over pizza.
7. Sprinkle the crust with Parmesan cheese.
8. Bake for 12-15 minutes for a thin crust, 15-20 for thick crust or desired crunchiness.
9. Allow pizza to sit for a couple minutes, remove from baking stone, slice & enjoy!

*I added pepperoni slices to this pizza per my husband's request, but it is NOT part of this recipe.

Pumpkin Cheesecake Cupcakes

These yummy cupcakes are perfect for Fall time & can be decorated just like Jack-O-Lanterns to fit right in with Halloween treats!
Ingredients
Filling:
  • 1 (8oz) pkg cream cheese, softened
  • 1 egg
  • 2 tbsps sugar
Cupcakes:
  • 1 (14oz) pkg PILLSBURY Pumpkin Quick Bread
  • 3/4 cup milk
  • 2 tbsps CRISCO Vegetable Oil
  • 1 egg
  • 3 tbsps butter, melted

1. Heat oven to 350 degrees F. Spray 12 muffin cups with non-stick spray, or use muffin liners.

2. Beat cream cheese in a medium mixing bowl until soft. Add egg and sugar, beat until smooth.

3. Empty pumpkin bread mix into a large bowl. Remove 3/4 cup dry mix and set aside to make topping. Add milk, oil, and egg to remaining bread mix in a large bowl. Stir 50 strokes or until blended well. (DO NOT ADD BUTTER TO MIX YET)

4. Fill each muffin cup with about 1/4 cup batter. Make indentation in batter with a small measuring spoon, sprayed with non-stick spray. Put 1 heaping tablespoon cream cheese mixture in the center of each cupcake.


5. Add melted butter to reserved dry mix, stir with a fork until crumbly. Crumble about 1 tablespoon over each cupcake.

6. BAKE for 20 minutes.

7. Allow cupcakes to cool in the pan for about 10 minutes

8. Then on a cooling rack allow them to cool completely before icing or decorating. (You can place them in the refrigerator to speed this time up.)


9. For the decorations I used 1/2 container of cream cheese icing & mixed in 4 drops yellow food coloring and 2 drops red food coloring, to create an orange color icing. I also used Green sparkle Gel Icing for the stems and leaves on the pumpkin.

10. I placed the mixed orange icing in to a large zip lock bag, twisted it tightly and cut a VERY small hole in to the tip.



11. Decorate each cupcake on a plate, it is much easier to clean up!

Cute, huh? My two year old helped me bake and decorate these! They are not only delicious, but fun for the whole family. So, what are you waiting for? :)

Baked Banana French Toast Casserole

Ingredients
  • 1 Banana Bread Loaf (see previous recipes)
  • 1 cup Fat-free Half and Half
  • 3 large eggs
  • 1/2 cup milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 whole banana, smashed with a fork
Topping:
  • 1 stick of margarine
  • 1/2 cup light brown sugar
  • 1 tablespoon light corn syrup
  • 1/2 cup of chopped nuts
  • 1/4 teaspoon cinnamon
1. Slice your already baked and cooled banana bread.
2. Grease a medium sized casserole dish.
3. In a large bowl mix together half and half, milk, eggs, sugar, vanilla extract, cinnamon, nutmeg, and banana.
4. Place a single layer of banana bread slices in the bottom of the casserole dish.
5. Evenly pour half of the mixture on top of the banana bread slices.
6. Repeat another layer of banana bread slices, then top with the remainder of the mixture.
7. Cover casserole dish with tin foil, and refrigerate over night, for at least 8 hours. This allows the banana bread slices to soak up the mixture completely, making some of the BEST tasting French Toast you have ever had!
This is what it should look like the next morning, most of the liquid is completely gone.
8. Now mix your topping ingredients together.
9. Pour on top of your bread and preheat your over to 350 degrees.
10. Bake in a 350 degree oven, uncovered for 40 minutes. Until your bread has become fluffy and has risen slightly to the top of casserole dish.
11. Once the french toast is done cooking, allow to sit for at least 10 minutes before serving. 
Enjoy the sinfully delicious treat!

Buffalo Chicken Sandwiches

If you like hot buffalo wings, you will LOVE this easy recipe!
Ingredients
  • 2 large chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon Olive Oil
  • 2 cups of your favorite Buffalo sauce (My favorites are Medium from Buffalo Wild Wings or Frank's Hot Sauce)
  •  1 large loaf of sandwich white bread (From your bakery or homemade!)
  • 1 tablespoon of Ranch/or Blue Cheese dressing, mixed with 2 tablespoons of buffalo sauce
  • Sliced American Cheese
  • Lettuce, rinsed well
  • Sliced tomatoes
  • Celery and Carrot sticks for a perfect side dish

1. In a foil lined, casserole dish, add olive oil and then chicken breasts. Add salt and pepper to taste.
2. Add buffalo sauce and cover entire chicken breasts, cover casserole dish.
3. Bake chicken breasts in a 400 degree oven for 25-30 minutes, covered. I baked some bread along with my chicken to save time!
4. Slice your white loaf horizontally, slightly thicker on the bottom side.
5. Toast both sides of your bread underneath a broiler until crispy and browned. About 2-4 minutes

6. Add mixture of ranch/blue cheese & buffalo sauce to top slice, and sliced American cheese to bottom half.
7. Add  your chicken breasts to the top of cheese, the cheese will melt to perfection! Also add lettuce and sliced tomatoes.

8. You now have one GIANT Buffalo Chicken Sandwich, you can eat like this if you have the appetite of a large horse.
Or you can slice in half and share, it is still a huge sandwich cut in half!

Serve with celery and carrots sticks, along with more dressing if you would like. This is such a simple and delicious recipe, everyone will love it!

Tomato & Basil Alfredo Bowtie Pasta


A VERY simple, delicious recipe!
Ingredients 
  • 1 package of fresh Basil
  • 2 tablespoons of minced garlic
  • 1/2 tablespoon of Olive Oil
  • 16oz can of diced tomatoes & juice
  • 1 jar of Alfredo pasta sauce 
  • 3 tablespoons of Parmesan cheese
  • 1lb of bow tie pasta
  • Salt & pepper to taste

1. Remove basil leaves from stems and tear leaves into thirds.
 2. In a medium sauce pan, heat olive oil on medium-high heat, add garlic and saute for 3 minutes.
3. Turn heat down to medium-low, add basil leaves and allow to cook for 2-3 minutes.

4. Add entire can of diced tomatoes & juices, you can add 1 tsp of sugar to help balance out some of the acidity.

5. Add jar of Alfredo sauce, Parmesan cheese, salt and pepper to taste, cover and let simmer for about 15 minutes together.

6. In the mean time boil water and cook bow tie pasta, drain and set aside. In the extra time I made some really simple cheese bread, I buttered some bread slices, & sprinkled with shredded Colby jack cheese. Set under a broiler for a few minutes, until crunchy and browned.
See so easy & cheesy! Yum!!
7. Add cooked pasta to your pasta sauce, stir well and allow to sit on low heat for about 7 minutes, the pasta will soak up the sauce, making every bite absolutely perfect!
Serve immediately and enjoy!
